How can I eat vegan with my many food allergies?

Hey folks!

I wish I were joking, but I am allergic to nuts, lentils, legumes, flax, and avocado. So that means no chickpea hummus, no cashew butter, no almond milk, no pea snacks, no avo toast, no beyond burgers, etc. I don’t buy meat at the grocery store (I’m not good at cooking it), and I’m lactose intolerant so I use Earth Balance, but I find it very hard to eat entirely/mostly vegan. Though I believe veganism is great for the environment and animal welfare, Ive received a lot of hate from vegans when I express I eat eggs, occasionally dairy with a lactaid pill, and meat from the more ethical sources I can find.

My mom was vegan and then vegetarian for most of my childhood so I ate mostly that way with occasional meat when eating out. I was a vegetarian for 8 of my teen years, but mostly ate fries when eating out, as teens do. Recently I worked at a vegan pub for four years which served delicious vegan junk food, but most of it I could not eat.

Though for some reason I can eat it, I don’t want to rely heavily on soy as my family has a history of breast cancer. I’d love some tips and tricks because I think being as planted based as possible should be the goal for everyone, while acknowledging the reality of allergies and availability etc. Many thanks!

Edited to add: oat milk has been a life saver when it comes to cereal and ice cream, but it doesn’t have much protein at all. My partner just became a vegetarian and I’d love more recipes. :)
